Just before Mo left to go back to school, I made a batch of sugar cookies that she could take with her. She loves, loves, loves cookies....especially these. I made a double recipe so I could try to make extras for the garden club boutique tomorrow. If you have read this blog long enough, you know how much I love little houses and that all of our houses are pink. Or at least the fantasy favorites are.

This double recipe makes lots of delicious, easy cookies - not sure how many, but enough for this project anyway.

1 cup softened butter

1 1/2 cups sugar

2 eggs

1 1/2 teaspoon vanilla

4 cups flour

1 teaspoon baking soda

1 teaspoon salt

Mix butter and sugar, then add eggs and vanilla. Combine dry ingredients and add to butter mixture. Mix well. Roll, cut with the shape of choice and bake at 375 degrees for 8- 10 minutes. Remove to a cooling rack.

My frosting recipe is always a spontaneous one and I'm not sure about the exactness of this, but I kind of start here: 1 cup powdered sugar, 1 tablespoon softened butter and 2 tablespoons warm water, a drop of vanilla. Add more water by drips or more sugar by spoonfuls to achieve spreadable consistency. Add coloring. Make a second uncolored batch for white piping and decorating. Frost, let dry, then decorate with white icing in a pastry tube fitted with a small tip. Let them dry overnight and package individually with pretty ribbons and tags.
